Something I recently discovered is if you freeze a ripe banana whole and then thaw it in the microwave it turns into a sort of pudding. I like to make some PB&B sandwiches this way:
1. Put frozen banana into microwave for about 3 minutes.
2. Toast bread in the meantime
3. When banana is done. squeeze it out of skin and mash it up to make it into a pudding. Warm up more if it needs it
4. Spread bread with peanut butter and spread the banana on the other side.
5. eat

@Ryan

Thanks for stopping by! I know what you mean about the toaster vs toaster oven situation. I pondered it before but couldn't come up with a good solution...

1) There's the Elvis Presley method where you mash a banana onto the bread and cook the sandwich in a frying pan (kind of like grilled cheese.)

2) You could cook the entire banana separately, perhaps on a stovetop burner, and then slice it up for the sandwich. Maybe wrap it in foil like a baked potato.

3) Microwave the banana slices until they get real soft, and then apply to the toasted bread.

That last one is probably the most feasible, but without the toaster oven it is quite a bit of extra work!

I LOVE Peanut Butter & Banana sandwiches!! They are my absolute favorite post-workout snack, thanks for recognizing how great they are! I've never thought to toast my banana, but it's a great idea. 1 Question: how would you recommend accomplishing this if you don't have a flat toaster oven? (Just the type of toaster you drop your bread into...) Food for thought!
